Choux au craquelin is a pastry that brings two textures together in a single bite — light, hollow choux dough and a thin, crisp crust called craquelin.
Craquelin is made from just three ingredients: butter, sugar and flour. As it bakes, that crust melts and cracks across the surface, giving the pastry its golden crackled look and its unforgettable crunch.
Choux dough dates back to 1540 and the court of Catherine de' Medici. Centuries later, adding the craquelin crust turned the classic cream puff into the modern pastry we know today.
